Highland Boundary

Highland Boundary

Our aim is to bring you the flavours of the Scottish wilderness in our botanical spirits. We hand-pick all of our botanicals from Scottish woodlands either on our farm or nearby. We are careful to only harvest a small amount of foliage, flowers or berries from any single plant, taking in one season only what would be browsed naturally. Highland Boundary captures the unique flavours of the Scottish wilderness and distils them into an innovative range of botanical spirits and liqueurs.

Buck & Birch

At Buck & Birch we don’t follow convention. We create liquid expressions of our landscape, celebrating the incredible variety of flavours respectfully harvested on our adventures into the wild.

These are drinks for the pleasure seekers, the adventurers, the foodies, chefs and cocktail creators. They are for those with an affinity for the great outdoors and a delight in their connection to it. Spirits, cocktails and liqueurs.

Crossbill Gin

Our Gins are a celebration of Scottish nature, made with wild, fresh botanicals, harvested by hand then slowly macerated in Glasgow before being distilled. Each bottle is a testament to our passion for creating an exceptional gin and showcasing the beauty of Scotland's natural resources.

The Botanist

When we set out to capture the essence of Islay, we looked at things in a new light. How could we create a gin of beautiful balance and satin smoothness, the very first of its kind from Islay? Something that evoked the feeling of being there, like the sweet scent of the gorse bloom in the air on the first days of spring. The earthy aromas of a woodland walk after the rain. The herbaceous fragrance as the wind blows across an open moor. A gin that would honour our island’s reputation for creating the highest quality spirits, revered the world over…
